Muffin Batter

  • 1 cup cream cheese, softened Make sure it is at room temperature.
  • 1/2 cup unsalted butter, softened Make sure it is at room temperature.
  • 1 cup granulated sugar
  • 2 large eggs Add one at a time.
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour You can substitute some with whole wheat flour.
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup lemon juice Adjust for stronger flavor.

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • In a large bowl, cream together the softened cream cheese, butter, and sugar until smooth.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and lemon juice.
  • In another bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  • Gently fold in the lemon zest.
  • Divide the batter evenly into the prepared muffin tin.

Baking

  • Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Allow muffins to cool for a few minutes in the tin before transferring to a wire rack to cool completely.

Notes

These muffins are best enjoyed warm. You can serve them on their own or with a light dusting of powdered sugar. For an extra special treat, consider topping them with a dollop of whipped cream or a drizzle of lemon glaze.
