Ingredients

Crust

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted

Filling

  • 2 packages cream cheese, softened (8 oz each)
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 cups whipped cream
  • 1 can (20 oz) crushed pineapple, drained

Instructions

Preparation

  • Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter.
  • Press this mixture into the bottom of a 9-inch springform pan.
  • In a large bowl, beat the cream cheese, 1 cup sugar, and vanilla extract until smooth.
  • Gently fold in the whipped cream and drained crushed pineapple until well combined.
  • Pour the cheesecake mixture over the crust in the springform pan.

Setting

  • Refrigerate for at least 4 hours or until set.

Serving

  • Slice it into individual pieces and serve on plates.
  • Garnish each slice with additional whipped cream or a few pineapple pieces.

Notes

Make sure the cream cheese is softened for easy mixing. Drain the crushed pineapple well to avoid excess moisture. For a sweeter crust, add more sugar to the graham cracker mixture. For a stronger pineapple flavor, consider adding pineapple juice to the cheese mixture.
