  • 1 cup brewed coffee, cooled Let the coffee cool before adding to the mixture.
  • 1/2 cup Baileys Irish Cream You can substitute with another flavored liqueur.
  • 3/4 cup buttermilk
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Preparation

  • Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  • In a large bowl, cream together the butter and sugar until light and fluffy.
  • Beat in the eggs one at a time.
  • In a separate bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, alternating with coffee, Baileys, and buttermilk until just combined.
  • Pour the batter into the prepared pan and smooth the top.

Baking

  • Bake for about 25-30 minutes or until a toothpick inserted comes out clean.
  • Allow to cool before serving.

Notes

This cake can be served plain or topped with whipped cream and powdered sugar for an extra treat. Store wrapped tightly or in an airtight container for up to 3 days at room temperature, or refrigerate for about a week. For longer storage, freeze wrapped for up to three months.
