Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup butter, softened Make sure the butter is softened, not melted.
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Filling and Topping

  • 1 cup vanilla pudding mix
  • 1 cup milk
  • 1 cup chocolate chips You can use white chocolate for a sweeter topping.
  • 2 tablespoons vegetable oil

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, mix together flour, cocoa powder, baking soda, and salt. Set aside.
  • In another bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the egg and vanilla extract, mixing well.
  • Gradually add the dry ingredients to the wet ingredients until combined.

Baking

  • Drop tablespoon-sized balls of dough onto the prepared baking sheet.
  • Bake for 10-12 minutes.
  • Allow cookies to cool completely.

Filling and Topping

  • Prepare the filling by whisking together the vanilla pudding mix and milk until thick. Refrigerate until needed.
  • Fill the center of each cooled cookie with vanilla pudding.
  • Melt chocolate chips with vegetable oil in a microwave until smooth and drizzle over the filled cookies.
  • Let the chocolate set, then serve and enjoy!

Notes

Store any leftover cookie bites in an airtight container in the refrigerator. Consume within 2-3 days for optimal taste and texture.
