Ingredients
  

For the crust

  • 1.5 cups sugar cookie dough

For the cheesecake filling

  • 16 ounces cream cheese, softened Make sure cream cheese is softened to room temperature.
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs Don't overbeat the eggs; mix just until incorporated.
  • 1 cup sour cream
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon salt

Preparation

  • Preheat the oven to 325°F (160°C).
  • Press the sugar cookie dough into the bottom of a greased springform pan to form the crust.
  • In a large mixing bowl, beat the cream cheese until smooth.
  • Add the sugar and vanilla, mixing until well combined.
  • Beat in the eggs one at a time, mixing just until incorporated.
  • Stir in the sour cream, flour, and salt until smooth.
  • Pour the cheesecake batter over the crust.

Baking

  • Bake for 50-60 minutes, or until the center is set but still slightly jiggly.
  • Let the cheesecake cool at room temperature, then refrigerate for at least 4 hours before serving.

Notes

Store any leftover cheesecake in the refrigerator wrapped tightly with plastic wrap or in an airtight container. It will stay fresh for about 4-5 days.
