Easy Cream Cheese Chicken

Ingredients
  

For the Chicken

  • 4 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil For cooking the chicken
  • to taste Salt For seasoning
  • to taste Pepper For seasoning

For the Sauce

  • 8 oz cream cheese, softened Soften before mixing
  • 1 cup chicken broth
  • 1 packet ranch seasoning mix

Preparation

  • In a large skillet, heat olive oil over medium heat.
  • Season chicken breasts with salt and pepper, then add them to the skillet.
  • Cook chicken for about 5 minutes on each side, until browned and cooked through.

Cooking

  • In a bowl, mix together cream cheese, chicken broth, and ranch seasoning until smooth.
  • Pour the cream cheese mixture over the chicken in the skillet.
  • Reduce heat to low and let simmer for 10-15 minutes, stirring occasionally, until the sauce is creamy and heated through.

Serving

  • Serve hot over cooked rice, egg noodles, or mashed potatoes.
  • Add a side of steamed broccoli or green beans.
  • Spoon extra sauce over the chicken and sides. Garnish with chopped parsley if you like.

Notes

Let the dish cool to room temperature before storing in an airtight container. Store in the fridge for up to 3 days. To reheat, warm on low in a skillet or microwave until hot. If the sauce is thick, add a splash of chicken broth when reheating.
