  • 4 pieces boneless, skinless chicken breasts Pound to an even thickness
  • 4 slices ham
  • 4 slices Swiss cheese
  • 1 cup breadcrumbs
  • 1/2 cup all-purpose flour Season with salt and pepper
  • 2 pieces eggs, beaten
  • 1/2 cup Dijon mustard For the sauce
  • 1/2 cup heavy cream For the sauce
  • 2 tablespoons olive oil For browning

Preparation

  • Preheat the oven to 400°F (200°C).
  • Pound the chicken breasts to even thickness if needed.
  • Place a slice of ham and a slice of Swiss cheese on each chicken breast.
  • Roll each breast tightly and fasten with toothpicks.
  • Dredge each roll in flour, dip in beaten eggs, then coat with breadcrumbs.

Cooking

  • Heat olive oil in a skillet on medium-high and brown the rolls on all sides.
  • Transfer rolls to a baking dish and bake at 400°F (200°C) for 25–30 minutes until cooked through.

Sauce

  • In a small pan, warm Dijon mustard with heavy cream to make the sauce.
  • Serve the rolls with the warm creamy sauce.

Notes

Serve hot with mashed potatoes, steamed vegetables, or a green salad. Brown the rolls first for more flavor and a crisp crust. Warm the sauce gently, do not boil the cream.
