Preparation

  • Preheat the oven to 400°F (200°C).
  • In a bowl, combine Parmesan cheese, breadcrumbs, minced garlic, Italian seasoning, salt, and pepper.
  • Brush each chicken breast with olive oil, then coat with the breadcrumb mixture, pressing it onto the chicken.
  • Place the coated chicken breasts on a baking sheet.

Cooking

  • Bake for 25-30 minutes, or until the chicken is cooked through and the coating is golden brown.
  • Garnish with fresh parsley if desired, and serve.

Notes

Pound the chicken to even thickness for uniform cooking. To check doneness, use a meat thermometer to ensure it reaches 165°F (74°C) inside. For extra crunch, broil for 1-2 minutes at the end.
