  • 1 cup cooked rice Cold or reheated to prevent mushiness.
  • 1 cup mixed vegetables (peas, carrots, corn) Frozen mixed vegetables can be used.
  • 1/2 cup barbecue sauce Can substitute with salsa or teriyaki sauce.
  • 1/2 cup shredded cheese Add more for a cheesier dish.
  • 1 tablespoon olive oil For sautéing the vegetables.
  • Salt and pepper to taste Adjust according to preference.

  • In a large skillet, heat olive oil over medium heat.
  • Add the mixed vegetables and sauté until tender.
  • Stir in the shredded rotisserie chicken, cooked rice, and barbecue sauce.
  • Cook until heated through, adding salt and pepper to taste.
  • Sprinkle shredded cheese on top and cover until melted.
  • Serve hot.

Notes

Serve this dish hot in a bowl or on a plate. Add a green salad on the side for freshness. You can also serve it in a warm tortilla for a quick wrap. Cool the dish to room temperature before storing in an airtight container for up to 3 days in the fridge or freeze for up to 2 months.
