  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies For a spicier version, use hot diced tomatoes.
  • 1 cup corn, frozen or canned
  • 2 cups Velveeta cheese, cubed Can substitute with plant-based cheese for a vegan version.
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste salt
  • to taste pepper

Preparation

  • In a large skillet, brown the ground beef over medium heat until cooked through. Drain excess fat.
  • Add in black beans, diced tomatoes, corn, cumin, chili powder, salt, and pepper. Stir to combine.
  • Reduce heat to low and add Velveeta cheese and milk. Stir until the cheese is melted and the mixture is smooth.
  • Add shredded cheddar on top and mix gently. Serve warm with tortilla chips.

Notes

Cowboy Cheese is best served warm. Scoop it out in bowls and serve with tortilla chips for dipping. Consider adding fresh veggies or jalapeƱos on the side for extra crunch and flavor. Leftover Cowboy Cheese should be cooled before storing in an airtight container in the refrigerator for 3 to 4 days. It can also be frozen and reheated on the stove or microwave.
