  • 2 cups cooked chicken, shredded rotisserie chicken works perfectly
  • 8 oz cream cheese, softened Make sure it's softened for easier mixing
  • 1/3 cup buffalo sauce Frank’s RedHot or similar
  • 1 packet ranch seasoning mix divided
  • 1/2 cup blue cheese crumbles optional
  • 1/2 cup shredded cheddar cheese
  • 4 green onions, finely chopped save some for garnish
  • 6 large (10-inch) flour tortillas
  • 2 tablespoons butter, melted
  • 1/4 cup ranch or blue cheese dressing for serving

Instructions
 

Preparation

  • In a large mixing bowl, combine the softened cream cheese and 3/4 of the ranch seasoning until smooth.
  • Add the buffalo sauce and mix until well combined.
  • Fold in the shredded chicken, cheddar cheese, blue cheese (if using), and most of the chopped green onions.
  • Lay a tortilla flat and spread about 1/3 cup of the buffalo chicken mixture across the bottom third, leaving an inch of space on each edge.
  • Fold in the sides of the tortilla, then roll it from the bottom up to create a tight cylinder. Place the roll seam-side down on a parchment-lined baking sheet.
  • Repeat with the remaining tortillas and filling.

Baking

  • Preheat the oven to 375°F (190°C).
  • Mix the melted butter with the remaining ranch seasoning and brush it over the roll ups.
  • Bake for 15-20 minutes until golden brown and crispy.
  • Let cool for 3-5 minutes, then cut each roll up diagonally into 2-3 pieces.

Serving

  • Sprinkle with reserved green onions and serve with extra buffalo sauce and ranch or blue cheese dressing for dipping.

Notes

If you have leftovers, store in an airtight container in the refrigerator for about 3 days. Reheat in the oven at a low temperature to keep them crispy.
