Preparation

  • In a medium saucepan, cube the Velveeta cheese and add it to the pan over low heat.
  • Add the pepper jack cheese and stir until melted and smooth.
  • Mix in the diced tomatoes with chiles, black beans, and chorizo (if using).
  • Stir to combine and heat through.
  • Remove from heat and sprinkle with green onions before serving.

Notes

Serve warm in a bowl surrounded by tortilla chips. For a healthier option, serve with fresh veggies. Leftovers can be stored in the refrigerator for up to 3 days.
