Filling Ingredients

  • 2 cups shredded rotisserie chicken
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup buffalo sauce
  • 1 tablespoon ranch seasoning

Wrapping Ingredients

  • 10 pieces egg roll wrappers

Preparation

  • In a bowl, mix together shredded rotisserie chicken, cheddar cheese, mozzarella cheese, buffalo sauce, and ranch seasoning until well combined.
  • Lay an egg roll wrapper on a clean surface and place a small amount of the chicken mixture in the center of the wrapper.
  • Fold in the sides and roll tightly to seal.

Cooking

  • Preheat the air fryer to 400°F (200°C).
  • Spray the egg rolls lightly with oil and place them in the air fryer basket.
  • Cook for 10-12 minutes, turning halfway through until they are crispy and golden.
  • If frying, heat oil in a deep pan and fry the rolls until golden brown.

Notes

Best served hot with a side of ranch dressing or extra buffalo sauce for dipping. Can be made ahead of time and stored in the fridge or freezer.
