  • 1 can corn, drained
  • 1 can black beans, drained and rinsed
  • 1 cup cream cheese, softened Soften before mixing for a smoother texture.
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese Can swap for pepper jack for more heat.
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 jalapeño, diced (optional) Remove seeds for milder flavor.
  • Salt and pepper to taste Add last after tasting.

For Serving

  • Tortilla chips, crackers, or fresh vegetables Serve with choice of dippers.

Preparation

  • In a large bowl, mix together the cream cheese and sour cream until smooth.
  • Stir in the corn, black beans, cheddar cheese, chili powder, cumin, jalapeño, salt, and pepper until well combined.
  • Transfer the mixture to a serving dish and refrigerate for at least 30 minutes to allow the flavors to meld.

Serving

  • Serve cold with tortilla chips, crackers, or fresh vegetables.

Notes

Store in an airtight container in the fridge for 3 to 4 days. Do not leave at room temperature for more than two hours. Freezing is not recommended as it may change the texture.
