Classic Ginger Garlic Chicken Noodle Soup

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 4 cups chicken broth Use homemade for extra flavor.
  • 2 cups cooked chicken, shredded Rotisserie chicken can be used.
  • 2 cups egg noodles Can be substituted with rice noodles or whole wheat pasta.
  • 2 medium carrots, sliced
  • 2 stalks celery, sliced
  • to taste Salt and pepper
  • for garnish Chopped green onions Optional; adds color and flavor.

Preparation

  • Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.
  • Stir in the minced garlic and grated ginger, cooking until fragrant.
  • Pour in the chicken broth and bring to a boil.
  • Add the sliced carrots and celery, and simmer for about 10 minutes.
  • Add the cooked chicken and egg noodles, cooking until the noodles are tender.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with chopped green onions.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. It can also be frozen, but leave out the noodles to prevent them from getting mushy.
