Main Ingredients

  • 1 lb ground beef or turkey Choose your preferred meat option.
  • 1 medium onion, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14 oz) diced tomatoes
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups beef broth
  • 1 packet taco seasoning
  • Salt and pepper to taste

Optional Toppings

  • shredded cheese Cheddar or your choice.
  • sour cream
  • chopped green onions
  • tortilla chips

Instructions
 

Preparation

  • In a large pot over medium heat, brown the ground beef or turkey with the chopped onion until cooked through. Drain any excess fat.
  • Add the black beans, kidney beans, corn, diced tomatoes, diced tomatoes with green chilies, beef broth, and taco seasoning to the pot.
  • Stir well and bring to a boil.
  • Reduce heat and let simmer for 20 minutes, stirring occasionally.
  • Season with salt and pepper to taste.

Serving

  • Serve hot with your choice of toppings like shredded cheese, sour cream, chopped green onions, or crunchy tortilla chips.

Notes

Store leftover Taco Soup in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Let it cool completely before sealing in a freezer-safe container.
