Ingredients

For the Marinade

  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar Can substitute with apple cider or white vinegar
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced

Main Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 4 pieces scallions, chopped
  • Salt and pepper To taste
  • Cooked rice For serving

Instructions

Preparation

  • In a bowl, combine soy sauce, sesame oil, rice vinegar, garlic, and ginger to create the marinade.
  • Add the chicken breasts to the marinade, ensuring they are well coated. Marinate for at least 30 minutes.

Cooking

  • Heat a pan over medium heat. Remove chicken from the marinade and cook for 6-7 minutes on each side until fully cooked.
  • Add chopped scallions in the last few minutes of cooking.

Serving

  • Remove from heat, slice the chicken, and serve over cooked rice. Drizzle any leftover sauce on top.

Notes

For more flavor, try marinating the chicken longer, up to 2 hours. If you like heat, add red pepper flakes to the marinade. Make sure the pan is hot before adding the chicken for a nice sear. Leftovers can be stored in an airtight container in the refrigerator for about 3-4 days.
