  • 1 lb ground beef Lean ground beef is recommended.
  • 1 medium onion Chopped.
  • 1 whole green bell pepper Chopped.
  • 2 cloves garlic Minced.
  • 2 cups potatoes, cubed Any variety of potato works.
  • 1 cup frozen corn Can substitute with fresh corn.
  • 1 cup sliced carrots Fresh or frozen.
  • 1 can condensed cream of mushroom soup 12 oz can.
  • 1 cup beef broth Low sodium is suggested.
  • 1 cup shredded cheddar cheese Can use other cheese types.
  • to taste Salt
  • to taste Black pepper

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, brown the ground beef with the onion and garlic until no pink remains; drain excess fat.
  • Stir in the bell pepper, potatoes, corn, and carrots; season with a pinch of salt and pepper.
  • Pour in the cream of mushroom soup and beef broth; mix until everything is well coated and creamy.
  • Transfer the mixture to a baking dish and sprinkle the cheddar cheese on top.

Baking

  • Bake for 25-30 minutes until potatoes are tender and the cheese is melted.
  • Let it stand for 5 minutes before serving.

Notes

Serve warm with a simple garden salad or crusty bread. Leftovers can be stored in the refrigerator for 3-4 days or frozen for up to 3 months.
