Ingredients
  

For the Chicken

  • 2 pieces boneless, skinless chicken breasts
  • 1 cup fresh pineapple, diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • to taste Salt and pepper

For Serving

  • 8 pieces small corn or flour tortillas
  • to taste Fresh cilantro, for garnish
  • as needed Lime wedges, for serving

Instructions
 

Preparation

  • Preheat the grill to medium-high heat.
  • In a bowl, combine olive oil, chili powder, garlic powder, salt, and pepper.
  • Coat the chicken breasts with the mixture.

Cooking

  • Grill the chicken for about 6-7 minutes on each side or until cooked through.
  • Remove from the grill and let rest for a few minutes before slicing.
  • Meanwhile, warm the tortillas on the grill for about 30 seconds on each side.

Assembly

  • To assemble the tacos, place sliced chicken on each tortilla, top with diced pineapple and fresh cilantro.
  • Serve with lime wedges on the side.

Notes

For extra flavor, marinate the chicken in the spice mixture for a few hours before grilling. You can also try adding other toppings like avocado slices, salsa, or cheese. If you don’t have a grill, you can cook the chicken in a skillet on the stovetop. Store leftovers separately and warm before serving again.
