  • 1 cup uncooked rice Fluffy white rice works best
  • 2 cups chicken broth Can be low-sodium if preferred
  • 1/2 cup honey For sweetness
  • 1/2 cup BBQ sauce Your favorite BBQ sauce works
  • 1 tablespoon olive oil For searing the chicken
  • 1 teaspoon garlic powder For seasoning
  • Salt and pepper to taste To enhance flavor
  • Chopped parsley For garnish

Preparation

  • In a large pan, heat olive oil over medium heat.
  • Season chicken breasts with salt, pepper, and garlic powder.
  • Sear the chicken in the pan until golden brown on both sides, about 5-7 minutes.
  • Remove the chicken and set it aside.

Cooking

  • In the same pan, add the rice and toast for 1-2 minutes.
  • Pour in the chicken broth, honey, and BBQ sauce, and stir to combine.
  • Place the chicken back into the pan, cover, and bring to a simmer.
  • Cook for 20 minutes or until the rice is tender and the chicken is cooked through.

Serving

  • Garnish with chopped parsley and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for 3 to 4 days. Reheat in the microwave or on the stovetop until heated through. You can add vegetables like bell peppers or corn for extra nutrition and color. For a different twist, try using teriyaki or sweet and sour sauce instead of BBQ sauce.
