Ingredients
  

For the Meatballs

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley for garnish and flavor
  • 1 unit egg
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

For the Sauce

  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning

Instructions
 

Preparation

  • In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic powder, salt, and pepper. Mix until well combined.
  • Form the mixture into meatballs and place them in the Crockpot.
  • In another bowl, mix together heavy cream, sun-dried tomatoes, minced garlic, and Italian seasoning. Pour this sauce over the meatballs in the Crockpot.

Cooking

  • Cook on low for 6-8 hours or on high for 3-4 hours until meatballs are cooked through and the sauce is bubbly.

Serving

  • Serve warm, garnished with additional parsley if desired, over a bed of pasta, rice, or with crusty bread.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days or freeze for up to three months. Thaw before reheating.
