  • 1 lb ground turkey
  • 2 cups cooked jasmine rice Prepare according to package instructions.
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha sauce Adjust for desired heat.
  • 2 tablespoons soy sauce Use gluten-free soy sauce for a gluten-free version.
  • 1 tablespoon lime juice
  • 1 cup chopped red bell pepper
  • 1 cup chopped carrots
  • 1 cup chopped broccoli
  • 1 tablespoon olive oil For cooking.
  • to taste Salt and pepper
  • 2 green onions, sliced For garnish.
  • 1 tablespoon sesame seeds For garnish.

Instructions
 

Preparation

  • Cook jasmine rice according to package instructions.
  • In a small bowl, mix together the mayonnaise, sweet chili sauce, sriracha sauce, and lime juice to create the bang bang sauce. Set aside.

Cooking

  • Heat a large skillet over medium-high heat and add the olive oil.
  • Add the ground turkey to the skillet, breaking it apart with a spoon, and cook until browned.
  • Once the turkey is cooked through, add the soy sauce, salt, and pepper. Stir well to combine.
  • Add the chopped red bell pepper, carrots, and broccoli to the skillet, cooking for another 5-7 minutes until the vegetables are tender-crisp.
  • Remove the skillet from heat and mix in half of the bang bang sauce.

Serving

  • Place a mound of cooked jasmine rice into individual bowls.
  • Top the rice with the turkey and vegetable mixture.
  • Drizzle the remaining bang bang sauce over each bowl.
  • Garnish with sliced green onions and sesame seeds.
  • Serve immediately and enjoy!

Notes

You can store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or stovetop. For variations, you can substitute chicken, beef, or tofu for ground turkey, and swap vegetables based on preference.
