  • 3 cups cooked chicken, shredded Use rotisserie chicken for a quicker option.
  • 2 cups salsa verde
  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 2 cups cooked rice (brown or white)
  • 1 cup shredded cheese (cheddar or Mexican blend) Use any cheese you prefer.
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the shredded chicken, salsa verde, black beans, corn, rice, cumin, garlic powder, salt, and pepper.
  • Transfer the mixture to a greased 9×13 inch baking dish.
  • Top with shredded cheese.

Baking

  • Bake for 25-30 minutes or until the cheese is bubbly and golden.
  • Garnish with fresh cilantro before serving.

Notes

Serve warm. It pairs well with a green salad or tortilla chips. For extra flavor, add a dollop of sour cream or avocado.
