  • 1 lb ground chicken Use ground chicken for a lighter meal option.
  • 4 cloves fresh garlic, minced Adjust the amount of garlic to taste.
  • 1 cup grated Parmesan cheese Reserve half for topping.
  • 1 cup breadcrumbs Either plain or Italian-seasoned.
  • 2 large eggs Eggs help bind the mixture.
  • 1 medium onion, diced For added flavor.
  • 2 tbsp soy sauce Low-sodium recommended.
  • 1 tsp salt Adjust to taste.
  • 1 tsp black pepper Freshly ground for best flavor.

Preparation

  • Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  • Sauté diced onions in a skillet over medium heat until soft (about 5 minutes).
  • In a large bowl, mix together ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan cheese until combined.
  • Shape the mixture into a loaf form in the greased baking dish.
  • Sprinkle remaining Parmesan cheese on top; optionally add paprika or Italian seasoning for extra flavor.

Baking

  • Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C).
  • Let rest for 10 minutes before slicing.

Notes

For added moisture, consider adding a little milk or chicken broth to the mixture. Experiment with different seasonings or herbs to make it your own. Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months.
