  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tablespoons fresh lemon juice
  • 1 piece lemon, sliced
  • 2 cloves garlic, minced
  • 1 piece onion, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh herbs for garnish (parsley or cilantro)

Preparation

  • In the slow cooker, combine the chicken thighs, rice, chicken broth, lemon juice, garlic, onion, thyme, rosemary, salt, and pepper.
  • Place lemon slices on top of the mixture.

Cooking

  • Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and the rice is tender.
  • Once cooked, fluff the rice and mix everything together gently.

Serving

  • Serve hot, garnished with fresh herbs.

Notes

Make sure to season the chicken and rice well for the best flavor. Feel free to add your favorite vegetables, such as peas or carrots, to make it even more nutritious. You can use chicken breasts instead of thighs if you prefer leaner meat.
