Ingredients
  

For the crust

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed Ensure it's very cold for a flaky crust.
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 large egg yolk
  • 1/4 cup cold water Add as needed for dough formation.

For the mango curd filling

  • 1 cup mango puree Use ripe mangoes for the best flavor.
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/2 cup fresh lime juice
  • 1/4 cup unsalted butter, melted

For serving

  • Whipped cream or fresh fruit Optional topping for serving.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, combine flour, powdered sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  • Mix in the egg yolk and cold water until the dough forms.
  • Roll the dough into a tart pan, and trim the edges. Prick the bottom with a fork and bake for about 20 minutes until lightly golden.

Cooking

  • In another bowl, whisk together mango puree, granulated sugar, eggs, lime juice, and melted butter until smooth.
  • Pour the mango mixture into the baked crust and bake for an additional 25-30 minutes until set.
  • Cool completely before serving.
  • Top with whipped cream or fresh fruit before serving.

Notes

Store any leftover tart in the refrigerator. Cover with plastic wrap or transfer to an airtight container for up to 3 days. Ensure to keep it chilled.
