  • 1.5 cups all-purpose flour
  • 1 cups granulated sugar
  • 0.5 cups unsweetened cocoa powder Use high-quality cocoa powder for better flavor.
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt

Wet Ingredients

  • 1 cups buttermilk You can substitute with regular milk mixed with vinegar or lemon juice.
  • 0.5 cups vegetable oil
  • 2 large eggs Use at room temperature.
  • 1 teaspoon vanilla extract
  • 1 cup boiling water

Add-ins

  • 1 cup chopped pistachios You can substitute with other nuts if desired.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a round cake pan.
  • In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add buttermilk, vegetable oil, eggs, and vanilla. Mix until well combined.
  • Gradually stir in the boiling water, mixing until smooth.
  • Fold in the chopped pistachios.

Baking

  • Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean.

Cooling

  • Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

To serve, you can top with chocolate ganache or cream cheese frosting, and sprinkle extra chopped pistachios on top for added flair. Store in an airtight container at room temperature for up to three days.
