Ingredients
  

For the Crust

  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted

For the Cheesecake Filling

  • 2 cups cream cheese, softened Make sure it's softened for a smooth mixture.
  • 1 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs Add one at a time, mixing well after each.
  • 1 cups dark chocolate, melted
  • 1 cups tart cherry filling

Instructions
 

Preparation

  • Preheat the oven to 325°F (160°C).
  • In a mixing bowl, combine graham cracker crumbs and melted butter until well blended.
  • Press the mixture firmly into the bottom of a 9-inch springform pan.
  • In a large bowl, beat cream cheese, sugar, and vanilla until smooth.
  • Add eggs one at a time, mixing well after each addition.
  • Stir in melted dark chocolate until fully combined.
  • Pour half of the cheesecake mixture on top of the crust and smooth it out.
  • Drop spoonfuls of tart cherry filling on top, then pour the remaining cheesecake mixture over it.

Baking

  • Bake for 50-60 minutes, or until set.
  • Allow to cool, then refrigerate for at least 4 hours before serving.

Notes

Serve chilled, optionally topped with whipped cream or fresh cherries. Store covered in the fridge for about 5-7 days. Can be frozen for up to 3 months.
