Ingredients
  

Crust

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted Ensure butter is fully melted

Cheesecake Filling

  • 2 packages (8 oz) cream cheese, softened Softened to room temperature
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups diced apples Any variety, Granny Smith recommended
  • 1 teaspoon cinnamon
  • 1/2 cup caramel sauce Can use store-bought

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease a baking dish.
  • In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press this mixture firmly into the bottom of the prepared dish.
  • In another bowl, beat cream cheese, 1 cup sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.
  • Fold in diced apples and cinnamon. Pour this mixture over the crust in the baking dish.
  • Drizzle caramel sauce on top and swirl it into the cheesecake mixture with a knife or a toothpick.

Baking

  • Bake for 30-35 minutes or until the bars are set in the center.
  • Allow the bars to cool, then refrigerate for at least 2 hours before cutting into squares.

Notes

These bars pair well with whipped cream or a scoop of vanilla ice cream. Store leftovers in an airtight container in the refrigerator for 4-5 days, or freeze for up to three months.
