Ingredients
  

For the crust

  • 2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup melted butter

For the filling

  • 16 oz cream cheese, softened Use room temperature for easier mixing.
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple, drained Make sure to drain well to avoid excess moisture.
  • 1 cup heavy whipping cream Whip until stiff peaks form.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, mix graham cracker crumbs, granulated sugar, and melted butter until combined.
  • Press the mixture firmly into the bottom of a 9-inch springform pan.
  • Bake the crust for 10 minutes, then let it cool.

Filling

  • In another bowl, beat the cream cheese until smooth.
  • Add powdered sugar and vanilla extract, mixing until well combined.
  • Fold in the crushed pineapple.
  • In a separate bowl, whip the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture.

Assembly and Chilling

  • Pour the filling over the cooled crust and smooth the top.
  • Chill in the refrigerator for at least 4 hours or until set.

  • Serve chilled and enjoy your tropical cheesecake!

Notes

For added flavor, consider adding a splash of coconut extract to the mix. Garnish with additional crushed pineapple or whipped cream if desired. To store leftovers, cover tightly and refrigerate for up to five days.
