Ingredients
  

Crust

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup brown sugar

Filling

  • 2 cups cream cheese, softened Ensure fully softened for smooth mixture.
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs

Topping

  • 2 cups peaches, sliced Fresh peaches recommended, canned peaches could be used.
  • 1 teaspoon cinnamon Add nutmeg for deeper flavor if desired.
  • 1/4 cup sugar (for peaches)

Instructions
 

Preparation

  • Preheat the oven to 325°F (160°C).
  • In a bowl, mix graham cracker crumbs, melted butter, and brown sugar. Press this mixture into the bottom of a springform pan.
  • In a separate bowl, beat cream cheese and sugar until smooth. Add vanilla and eggs, mixing well.
  • Pour the cream cheese mixture over the crust.
  • In another bowl, mix sliced peaches with cinnamon and 1/4 cup of sugar.
  • Layer the peaches on top of the cheesecake layer.
  • Bake for 50-60 minutes or until the edges are set and the center is slightly jiggly.
  • Allow to cool, then refrigerate for at least 4 hours before serving.

Notes

Serve chilled. You can slice it into wedges and plate it with a dollop of whipped cream or a scoop of vanilla ice cream on the side. Store leftovers covered in the refrigerator for 3-4 days.
