Ingredients
  

Cheesecake Base

  • 8 oz cream cheese, softened Must be at room temperature for easy mixing.
  • 1/2 cup granulated sugar
  • 3 large eggs Add one at a time.
  • 1/2 cup heavy cream
  • 1 cup ml sour cream
  • 1/2 cup cocoa powder
  • 1 tsp vanilla extract

Cherry Filling

  • 1 cup cherries, pitted and chopped Feel free to use fresh or thawed frozen cherries.

Garnish

  • Chocolate shavings For garnish.

Preparation

  • Preheat your oven to 350°F (175°C). Grease a springform pan.
  • In a bowl, beat the cream cheese and sugar until smooth.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the heavy cream, sour cream, cocoa powder, and vanilla extract until fully combined.
  • Gently fold in the chopped cherries.

Baking

  • Pour the cheesecake batter into the prepared pan.
  • Bake for 50-60 minutes, or until the center is set.
  • Allow to cool, then refrigerate for at least 4 hours before serving.

Serving

  • Serve chilled, garnish with chocolate shavings and additional cherries if desired.

Notes

Store leftovers covered in the refrigerator for up to a week. Can be frozen for up to three months. Consider covering cracks with chocolate shavings or whipped cream when serving.
