Ingredients
  

Cookie Base

  • 1 cup unsalted butter, softened Make sure butter is at room temperature.
  • 1 1/4 cups brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon Add more for a stronger cinnamon taste.

Mix-Ins

  • 1 cup caramel bits or chunks
  • 1/2 cup chocolate chips (optional) Can substitute or omit.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in the vanilla extract.
  • In another bowl, mix together the flour, baking soda, salt, and ground cinnamon.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the caramel bits and chocolate chips if using.

Baking

  • Drop rounded tablespoons of cookie dough onto ungreased baking sheets.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Allow to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes

Best served warm, straight from the oven. Consider sprinkling a little sea salt on top of the warm cookies for an extra touch. Store in an airtight container at room temperature for about a week or freeze for up to three months.
