Ingredients
  

Cheesecake Filling

  • 8 oz cream cheese, softened Ensure the cream cheese is softened for easy mixing.
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup strawberries, chopped Fresh strawberries work best.

Pastry

  • 1 package puff pastry (2 sheets) Thaw according to package instructions.
  • 1 egg for egg wash Beaten.
  • powdered sugar for dusting For serving.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a medium bowl, mix the cream cheese, sugar, and vanilla extract until smooth.
  • Fold in the chopped strawberries.
  • Roll out the puff pastry on a floured surface and cut into squares.
  • Place a spoonful of the cheesecake filling in the center of each square.
  • Fold the pastry over to create a triangle and seal the edges with a fork.
  • Brush the tops with beaten egg.

Baking

  • Bake for 15-20 minutes or until golden brown.

Serving

  • Allow to cool slightly, then dust with powdered sugar before serving.

Notes

Best served warm with vanilla ice cream. Can store in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze before baking and thaw before baking.
