  • 1 can cream of chicken soup (10.5 ounces)
  • 1 cup sour cream Consider using low-fat options for a healthier version.
  • 1 cup shredded cheddar cheese Other cheese varieties like Monterey Jack can be used.
  • 1 cup crushed buttery crackers (like Ritz) Crush the crackers small for even baking.
  • 1/2 cup milk
  • 1/4 cup green onions, chopped
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 cup melted butter

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, milk, garlic powder, black pepper, and salt. Mix until well combined.
  • Stir in the shredded cheddar cheese and chopped green onions.
  • Pour the chicken mixture into a greased 9×13-inch baking dish, spreading it evenly.
  • In a separate bowl, combine the crushed crackers and melted butter. Mix until the crackers are well coated.
  • Sprinkle the cracker mixture evenly over the chicken mixture in the baking dish.

Baking

  • Bake in the preheated oven for 30-35 minutes, or until the casserole is bubbly and the topping is golden brown.
  • Let it cool for about 5 minutes before serving.

Notes

Serve this casserole hot, accompanied by a simple green salad, steamed vegetables, or plain rice. For extra crunch, add more crackers on top for the last 5 minutes of baking. It can be stored in the fridge for up to 3-4 days or frozen for up to 2 months.
