  • 1 lb ground chicken
  • 1 cup grated parmesan cheese
  • 3 cloves garlic, minced Use fresh garlic for best flavor.
  • 1/2 cup breadcrumbs Add more if the mixture feels too wet.
  • 1/4 cup chopped fresh herbs (such as parsley and basil) Can substitute with rosemary or thyme.
  • 1 large egg Helps bind the meatloaf.
  • to taste Salt and pepper
  • Olive oil for greasing

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine ground chicken, parmesan cheese, minced garlic, breadcrumbs, chopped herbs, egg, salt, and pepper. Mix until just combined.
  • Form the mixture into mini meatloaf shapes and place them on a greased baking sheet.

Baking

  • Bake in the preheated oven for 25-30 minutes, or until the meatloaves are cooked through and golden on top.

Notes

Store in an airtight container in the fridge for up to 3 days. To freeze, wrap tightly and freeze for up to 3 months. Reheat in the oven at 325°F until warm.
