Ingredients
  

For the roast

  • 4 to 5 lb 4 to 5 lb beef tenderloin (room temperature for even cooking)
  • 1 tsp 1 tsp salt
  • 1/2 tsp 1/2 tsp black pepper
  • 2 tbsp 2 tbsp avocado oil
  • 1 tsp 1 tsp prepared horseradish or Dijon mustard
  • 2 tsp 2 tsp minced garlic
  • 1 tsp 1 tsp minced rosemary or thyme (fresh preferred)
  • 4 tbsp 4 tbsp salted butter (Kerrygold preferred for richness)

Preparation

  • Preheat the oven to 425°F (220°C).
  • Pat the beef dry with paper towels.
  • Season the beef all over with salt and pepper. Rub avocado oil on the outside.
  • Heat a large skillet over high heat. Add the roast and sear each side until brown, about 1–2 minutes per side. Sear the ends too.
  • Mix horseradish or mustard with garlic and herbs. Spread over the seared roast.
  • Place butter on top of the roast.

Cooking

  • Roast in the hot oven for about 20–25 minutes for medium-rare (internal temp 125–130°F / 52–54°C).
  • Remove the roast from the oven and tent with foil. Let it rest for 15–20 minutes.
  • Slice the roast to serve.

Notes

Bring the meat to room temperature before roasting for even cooking. Use a meat thermometer for proper doneness. Let the roast rest before slicing to keep it juicy. Sear well for a nice crust. For variations, replace horseradish with whole-grain mustard for a milder taste, or add a crumb topping for extra texture.
