  • 1 4-5 lb beef roast Choose your preferred cut of beef.
  • 4-5 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped Can substitute with thyme for a different flavor.
  • 2 tablespoons olive oil
  • to taste teaspoon Salt
  • to taste teaspoon Pepper
  • 1 cup beef broth or red wine (like Rioja Reserva) Red wine adds a bit of acidity.

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a small bowl, mix together minced garlic, chopped rosemary, olive oil, salt, and pepper.
  • Rub the garlic and rosemary mixture all over the beef roast, ensuring it’s evenly coated.
  • Place the roast in a roasting pan and pour the beef broth or red wine around it.

Cooking

  • Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches your desired doneness (medium rare is about 135°F).
  • Let the roast rest for 10-15 minutes before slicing.

Notes

Cool the roast to room temperature before storing. Store slices in an airtight container in the fridge for up to 4 days, or freeze for up to 3 months. Thaw in the fridge before reheating. For extra flavor, sear the roast in a hot pan for a few minutes per side before roasting.
