Ingredients
  

For the Bang Bang Sauce

  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha adjust for heat preference
  • 1 tablespoon lime juice
  • to taste salt and pepper

For the Chicken Skewers

  • 1 pound chicken breast, cut into cubes
  • as needed skewers soaked in water if wooden

Instructions
 

Preparation

  • In a bowl, combine mayonnaise, sweet chili sauce, sriracha, lime juice, salt, and pepper to make the bang bang sauce.
  • Toss the chicken cubes in half of the bang bang sauce.
  • Preheat the grill to medium-high heat.
  • Thread the chicken onto skewers.

Cooking

  • Grill the skewers for about 10-12 minutes, turning occasionally until fully cooked.

Serving

  • Serve warm with the remaining bang bang sauce for dipping.

Notes

Cool the chicken to room temperature before storing. Keep in an airtight container in the fridge for up to 3 days. Reheat gently in the oven or on the grill. Do not leave at room temperature for more than two hours.
