  • 2 cups cooked rice Use day-old rice for better texture.
  • 1 cup cooked chicken, diced Ensure chicken is cut into small, even pieces.
  • 2 eggs beaten Add more eggs for a richer texture if desired.
  • 1 cup mixed vegetables (carrots, peas, bell peppers) Cook until just tender for crunch.
  • 3 tablespoons bang bang sauce Add more for extra heat.
  • 2 tablespoons soy sauce Adjust to taste.
  • 1 tablespoon vegetable oil Used for cooking.
  • to taste Salt and pepper Season as needed.
  • for garnish Green onions Chopped, for serving.

Instructions
 

Cooking

  • Heat vegetable oil in a large skillet over medium heat.
  • Add the mixed vegetables and stir-fry for 2-3 minutes until tender.
  • Push the veggies to one side of the pan and pour in the beaten eggs, scrambling them until fully cooked.
  • Add in the cooked rice and diced chicken, mixing well with the vegetables and eggs.
  • Pour in the bang bang sauce and soy sauce, stirring everything together until heated through.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with chopped green onions.

Notes

Cool leftover rice before refrigerating. Store in an airtight container for up to 3 days. Reheat with a splash of water or oil to prevent sticking.
