  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin

  • 1 cup cooked rice
  • 1 can black beans, rinsed and drained
  • 1 cup chopped fresh vegetables (like bell peppers and corn) Use your favorite fresh vegetables
  • 1/2 cup chipotle ranch dressing
  • 4 large tortillas Flour or whole wheat tortillas

Preparation

  • Preheat the grill.
  • Season the chicken breasts with smoked paprika, garlic powder, cumin, salt, and pepper.

Cooking

  • Grill the chicken until fully cooked, about 6-7 minutes per side.

Assembly

  • In a large bowl, combine the cooked rice, black beans, fresh vegetables, and chipotle ranch dressing.
  • Slice the grilled chicken.
  • Place a tortilla on a flat surface and layer with a portion of the rice and bean mixture and sliced chicken.
  • Roll the tortilla tightly to form a burrito.

Notes
