  • 2 cups cooked rice Use day-old rice for the best texture
  • 1 lb ground chicken Can substitute with other proteins like shrimp or tofu
  • 1 cup mixed vegetables (carrots, peas, bell peppers) Feel free to switch out with other vegetables
  • 2 tablespoons soy sauce Substitute with gluten-free soy sauce if needed
  • 2 tablespoons vegetable oil Used for cooking
  • 2 pieces eggs, beaten Add for extra protein and richness
  • 2 pieces green onions, chopped For garnish
  • Salt and pepper to taste Adjust according to preference

Cooking

  • In a large skillet, heat the vegetable oil over medium-high heat.
  • Add the ground chicken to the skillet and cook until it is browned.
  • Stir in the mixed vegetables and cook until they are tender.
  • Push the chicken and vegetables to one side of the pan. Pour the beaten eggs into the empty side and scramble until cooked.
  • Add the cooked rice and soy sauce to the pan. Mix everything together well.
  • Cook for an additional 2-3 minutes, stirring frequently to heat through.
  • Season with salt and pepper, then garnish with chopped green onions before serving.

Notes

Ground Chicken Fried Rice is best served hot. Great to pair with spring rolls or a side salad. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days. To reheat, warm in the microwave or on the stovetop.
