  • 1 cup ranch dressing Use low-fat ranch if preferred.
  • 2 tablespoons olive oil For cooking the chicken.
  • to taste salt and pepper Seasoning for the chicken.
  • optional chopped parsley For garnish.

Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Season the chicken breasts with salt and pepper.
  • Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until golden brown and cooked through.
  • Once the chicken is cooked, reduce heat to low and pour ranch dressing over the chicken.
  • Let it simmer for 2-3 minutes to heat the dressing.
  • Garnish with chopped parsley if desired and serve warm.

Notes

For a full meal, serve hot with rice, mashed potatoes, pasta, or a green salad. You can also slice the chicken and serve over greens or pasta, adding steamed vegetables on the side. Store in an airtight container in the fridge for up to 3 days.
