Main Ingredients

  • 2 lbs boneless, skinless chicken breasts Use thawed chicken for even cooking.
  • 1 packet ranch seasoning mix The ranch mix adds a lot of flavor.
  • 1 (8 oz) package cream cheese Soften before adding to help it melt faster.
  • 1 cup cheddar cheese, shredded Can substitute with pepper jack for a spicy kick.
  • 6 slices bacon, cooked and crumbled Cook until crisp for the best texture.
  • 1/4 cup green onions, chopped Add extra for serving.

Preparation

  • Add the chicken breasts to the slow cooker.
  • Sprinkle the ranch seasoning mix over the chicken.
  • Place the cream cheese on top of the chicken.
  • Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is cooked through.
  • Remove the chicken and shred it with two forks, then return it to the slow cooker.
  • Stir in the cheddar cheese and crumbled bacon until melted.
  • Top with chopped green onions before serving.

Notes

Serve on buns for sandwiches, over rice or pasta, in tacos, or as a dip with crackers or chips. Cool and store in an airtight container for up to 4 days in the fridge, or freeze for up to 3 months.
