  • 4 pieces chicken breasts
  • 1 cup sundried tomatoes, chopped
  • 1 cup heavy cream Use full-fat for a richer sauce.
  • 1/2 cup Parmesan cheese, grated Can substitute with Pecorino or Asiago.
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste Adjust at the end of cooking.
  • Fresh basil for garnish Add for color and taste.

Preparation

  • Place the chicken breasts in the crock pot.
  • In a bowl, mix together the sundried tomatoes, heavy cream, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  • Pour the sauce over the chicken in the crock pot.

Cooking

  • Cover and cook on low for 4–6 hours, or until the chicken is cooked through and tender.

Serving

  • Serve the chicken over cooked pasta, rice, or mashed potatoes, garnished with fresh basil. Spoon extra sauce over the top.

Notes

Let the chicken cool to room temperature before storing in an airtight container. Refrigerate for up to 3 days or freeze for up to 2 months. To reheat, do so gently.
