  • 3-4 pieces boneless, skinless chicken breasts Pound to an even thickness for even cooking.
  • 1 cup shredded Jack cheese
  • 2 tablespoons olive oil
  • 2-3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • ½ cup sour cream Use full-fat for a richer taste.
  • Salt and pepper to taste Taste and adjust after adding sour cream.
  • Chopped green onions and paprika for topping

Preparation

  • Preheat your oven to 375°F (190°C).
  • Rub olive oil over chicken breasts and season with salt and pepper.

Cooking

  • In a skillet over medium-high heat, sear chicken until golden brown on both sides (about 5 minutes per side).
  • Add minced garlic and cook for 30 seconds until fragrant.
  • Pour in chicken broth and let simmer while scraping the pan.
  • Stir in sour cream until well combined, allowing the mixture to bubble for about 5 minutes.
  • Top each chicken breast with shredded Jack cheese and transfer to the oven.
  • Bake for around 15 minutes or until cheese is melted and bubbly.

Serving

  • Serve this chicken over mashed potatoes, rice, or pasta to catch the creamy sauce.
  • Add a side of steamed vegetables or a green salad for color.
  • Spoon extra sauce over each plate before serving.

Notes

Cool the chicken to room temperature, then place it in an airtight container. Store in the fridge for up to 3 days. Reheat in the oven at 350°F (175°C) for 10–15 minutes or in the microwave, noting that sauce may separate slightly.
