  • 4 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup sun-dried tomatoes (packed in oil)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • to garnish Fresh basil

Preparation

  • Season the chicken breasts with salt, pepper, garlic powder, and onion powder.
  • Heat olive oil in a large skillet over medium heat.
  • Add the seasoned chicken breasts and cook for 5-7 minutes on each side until cooked through.
  • Remove the chicken from the skillet and set aside.

Sauce Preparation

  • In the same skillet, add the sun-dried tomatoes and heavy cream, stirring to combine.
  • Bring the mixture to a simmer and let it thicken slightly.
  • Stir in the Parmesan cheese and mix until smooth.

Combine and Serve

  • Return the chicken to the skillet, coating it in the creamy tomato sauce.
  • Cook for an additional 2-3 minutes until heated through.
  • Serve hot, garnished with fresh basil.

Notes

Pound the chicken breasts to even thickness for even cooking. Do not crowd the pan; cook in batches if needed. Use the oil from the sun-dried tomatoes for extra flavor. Stir the sauce often so the cheese melts and the sauce stays smooth. Taste and add salt or pepper after the cheese, if needed.
