Ingredients
  

For the Steak

  • 1 lb sirloin steak (about 1-inch thick)
  • 3 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1 tbsp lemon juice (fresh)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper

For the Bowl

  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup roasted chickpeas (optional for paleo or keto)
  • 1 cup cherry tomatoes (halved)
  • 1 medium cucumber (diced)
  • ½ small red onion (thinly sliced)
  • ½ cup kalamata olives (pitted)
  • cup feta cheese (crumbled; optional for dairy-free)
  • ¼ cup fresh herbs (parsley or dill, chopped)

For the Tzatziki

  • 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
  • ½ medium cucumber (grated, squeezed dry)
  • 1 tbsp lemon juice (fresh)
  • 1 clove garlic (mined)
  • 1 tbsp fresh dill (chopped)
  • Salt & pepper (to taste)

For the Vinaigrette

  • 3 tbsp olive oil
  • 2 tbsp lemon juice (fresh)
  • 1 tsp honey (omit for Whole30)
  • 1 clove garlic (minced)
  • ½ tsp dried oregano
  • Salt & pepper (to taste)

Instructions
 

Marinate the Steak

  • Mix marinade ingredients (3 tbsp olive oil, 2 minced garlic cloves, 1 tbsp lemon juice, 1 tsp oregano, 1 tsp thyme, ½ tsp salt, ¼ tsp pepper). Coat the steak. Marinate for 30 minutes to 4 hours.

Prepare Tzatziki

  • Mix tzatziki ingredients (yogurt, grated cucumber, lemon, garlic, dill, salt & pepper). Chill in the fridge.

Whisk Vinaigrette

  • Whisk vinaigrette ingredients (olive oil, lemon juice, honey, garlic, oregano, salt & pepper). Set aside.

Cook the Steak

  • Heat a skillet on high. Sear the steak for 4–5 minutes per side for medium (time changes with thickness). Let the steak rest for 5–10 minutes. Slice thinly across the grain.

Assemble the Bowls

  • Layer bowls: start with 2 cups cooked grains, add sliced steak, then tomatoes, cucumber, red onion, olives, roasted chickpeas, feta, and fresh herbs. Spoon tzatziki and drizzle vinaigrette over each bowl.

Notes

Serve warm or at room temperature. Place tzatziki on top or on the side. Offer extra lemon wedges and olive oil. Serve with pita or a green salad if desired. Store components separately for best texture.
