For the Chicken

  • 1 lb chicken breast or thighs, cut into bite-sized pieces Pat dry for better crisping.
  • 2 tbsp cornstarch To coat chicken for a sticky and crispy texture.
  • 2 tbsp vegetable oil For frying the chicken.

For the Sauce

  • 1/4 cup soy sauce For the base of the sauce.
  • 3 tbsp honey Provides sweetness.
  • 4 cloves garlic, minced Use fresh for better flavor.
  • 1 tsp grated ginger Gives a spicy note.
  • 1/2 tsp red chili flakes Optional, for a bit of heat.

For the Noodles

  • 8 oz noodles (rice noodles or egg noodles) Cook according to package instructions.
  • 1 tsp sesame seeds Optional, for garnish.

Preparation

  • In a bowl, mix soy sauce, honey, minced garlic, grated ginger, and red chili flakes (if using) to form a sauce.
  • Toss chicken pieces with cornstarch until evenly coated.

Cooking

  • Heat vegetable oil in a large skillet or wok over medium-high heat.
  • Add the coated chicken and cook for about 6 to 8 minutes, stirring occasionally, until golden brown.
  • Pour the sauce over the cooked chicken and stir to coat. Let simmer for 2 to 3 minutes until thickened.
  • Meanwhile, cook noodles according to package instructions, then drain.
  • Add the cooked noodles to the skillet and toss to combine.
  • Garnish with green onions and sesame seeds before serving.

Notes

Serve hot in shallow bowls, with chopsticks or forks. Add extra green onions or a squeeze of lime for added freshness. Store in an airtight container in the fridge for up to 3 days.
