Ingredients
  

For the Chicken

  • 4 pieces boneless, skinless chicken breasts
  • Salt to taste Salt
  • Pepper to taste Pepper

For the Sauce

  • 1 cup fresh or frozen cranberries Both fresh and frozen work well.
  • 1 piece orange, juiced and zested
  • 1/4 cup brown sugar Add more if the sauce is too tart.
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Fresh parsley for garnish Fresh parsley for garnish Optional

Instructions
 

Preparation

  • Preheat oven to 375°F (190°C).
  • In a bowl, mix cranberries, orange juice, orange zest, brown sugar, soy sauce, and olive oil.
  • Season chicken breasts with salt and pepper, then place them in a baking dish.
  • Pour the cranberry-orange mixture over the chicken.

Cooking

  • Bake for 25-30 minutes, or until the chicken is cooked through.
  • Garnish with fresh parsley if desired.
  • Serve warm and enjoy!

Notes

Cool the chicken to room temperature before storing in an airtight container. Refrigerate up to 3-4 days. You can freeze cooked chicken in a freezer container for up to 2 months. Thaw in the fridge before reheating.
